When local strawberries are in season, I can’t get enough of them on salads. Salads in general can be prepped in minutes and paired with the protein of choice for an easy yet quick meal. I like to use homemade dressing with a simple combination of spinach, strawberries, almonds, red onion, and avocado.
Here’s a tasty and simple salad that’s good for you. Feel free to add some toasted walnuts and a light drizzle olive oil dressing. Enjoy!
Ingredients:
1 cup finely chopped strawberries
1/4 cup finely chopped peeled avocado
2 tablespoons finely chopped red onion
2 tablespoons chopped fresh cilantro
1/2 teaspoon grated lime rind
2 tablespoons fresh lime juice
2 teaspoons finely chopped seeded
Jalapeño pepper
1/4 teaspoon sugar
Directions:
Combine all ingredients in a medium bowl; toss gently. Serve immediately. Serves 4
