If you didn’t reveal it, no one would know these delicious Paleo Apple Cookies are packed with vitamins. Give them to the kids to sneak some vitamin C-rich apples into their diets, or wrap them up as a holiday gift for health-conscious friends and family.
Paleo Apple Cookies, yields 24 cookies

Ingredients:
- 2 large apples, peeled, cored and cut into eighths
- 2 cups slivered almonds
- 2 teaspoons coconut oil, melted
- 2 teaspoons vanilla extract
- 1 tablespoon of cinnamon
- 1 cup finely shredded unsweetened coconut
- A pinch of Kosher salt
- 3 large eggs, lightly beaten
Directions:
- Preheat oven to 350
- Grate the apples with a grater or food processor; place aside
- Chop in the food processor – almonds, cinnamon, coconut oil and vanilla – pulse until coarse
- Combine two mixtures into a large bowl
- Add the eggs and mix evenly
- Form into cookies and bake for about 25 to 30 min. At the halfway mark, rotate the tray
- Let cool on the baking rack for 15 to 20 minutes and enjoy your Paleo Apple Cookies!
