A quinoa recipe that’s delicious, tastes amazing, and EASY to make.
Quinoa, a high-protein grain native to South America can be found in most health food. This quinoa recipe represents a tapioca texture, but with fantastic nutritional benefits!
2/3 C Quinoa, uncooked
2 C skim Milk
2 T skim Milk
1/8 tsp salt
1/4 c sugar
1 egg
1 1/2 tsp vanilla
2 c sliced strawberries
1/4 c vanilla yogurt
dash ground cinnamon (optional)
Preparation:
Place Quinoa in fine mesh strainer, rinse with cold water and drain. Heat Quinoa and 2 c skim milk in 2 qt saucepan, just until steaming and small bubbles foam around edge of saucepan. Reduce heat; simmer uncovered 20-25 min or until quinoa is tender, stirring frequently. Meanwhile, whisk together remaining 2 T milk, sugar, egg, and vanilla in medium bowl. Slowly stir about 1/2 c hot milk mixture into egg mixture and stir.
Gradually add warmed egg mixture into remaining hot milk and quinoa mixture in saucepan. cook over medium heat, stirring constantly, 3-5 min or until mixture thickens and is bubbly. Remove from heat. Let cool 30 min.
In parfait glasses layer quinoa with strawberries and dollop each with yogurt and sprinkle with cinnamon.
