I’m a huge fan of buffalo chicken dip, but between the cream cheese, ranch dressing, cheese, and dipping chips, the fat content quickly soars through the roof. In this less-caloric version, Laughing Cow cheese wedges replace the cream cheese, and ranch seasoning replaces the dressing. Serving this healthy buffalo chicken dip over slaw packs a ton of flavor and retains the “crunch” of chips. Alternatively, slice up your favorite high-fiber tortilla, bake a couple of minutes, and voila: healthier chips.
Ingredients:
1 large chicken breast
2 wedges Laughing Cow Queso Fresco
1 tablespoon Frank’s Red Hot
1.5 teaspoons ranch seasoning
2 tablespoons milk
Garlic and onion powder to taste
Method:
1. Broil chicken with garlic & onion powder. Then shred the chicken.
2. While the chicken is cooking. Combine the remaining ingredients into a sauce.
3. Add shredded chicken, stir to coat. Serve the healthy buffalo chicken dip over shredded lettuce, spinach, a broccoli slaw, or with pita chips.
4. Garnish with green onion.
