If you didn’t reveal it, no one would know these delicious Paleo Apple Cookies are packed with vitamins. Give them to the kids to sneak some vitamin C-rich apples into their diets, or wrap them up as a holiday gift for health-conscious friends and family.

Paleo Apple Cookies, yields 24 cookies

Ingredients:

  • 2 large apples, peeled, cored and cut into eighths
  • 2 cups slivered almonds
  • 2 teaspoons coconut oil, melted
  • 2 teaspoons vanilla extract
  • 1 tablespoon of cinnamon
  • 1 cup finely shredded unsweetened coconut
  • A pinch of Kosher salt
  • 3 large eggs, lightly beaten

Directions:

  • Preheat oven to 350
  • Grate the apples with a grater or food processor; place aside
  • Chop in the food processor – almonds, cinnamon, coconut oil and vanilla – pulse until coarse
  • Combine two mixtures into a large bowl
  • Add the eggs and mix evenly
  • Form into cookies and bake for about 25 to 30 min.  At the halfway mark, rotate the tray
  • Let cool on the baking rack for 15 to 20 minutes and enjoy your Paleo Apple Cookies!
